Hi,
Although problems with apps can happen anytime, some users have reported that after upgrading to Big Sur, their Mail, Music or another app quits unexpectedly. In this article, we will give you some troubleshooting tips for fixing this problem. For more articles on Big Sur issues, see. There are different reasons why the Mail app quits unexpectedly on MacOSX High Sierra 10.13.6 and other macOS versions. It is likely that a recent update has broken the Mail app indexes, causing it to crash. Too many emails can also affect app performance, resulting in network hang-ups characterized by the spinning color wheel.
I have looked at the log.

Messages App Quits Unexpectedly Macbook
It looks like Messages is hanging before it Unexpectedly Quits. (com.apple.ichat is the Bundle name)
I would do a NVRAM reset as a first step see How to reset NVRAM on your Mac - Apple Support
Retry Messages.
If that does not work try a Safe Boot
If that has not worked check the Contacts App > Card Menu > My Card.
Is this your Details ?
In Preferences > Accounts is only one account Active ?
Messages App Quits Unexpectedly Mac
Having multiple accounts all trying to sync tends to get it caught in an endless loop of checking and Messages has to wait for it to finish (which it never does).
There can be other causes such as the Serial Number becoming unreadable or the ownership or Permission of .plists or the Keychain being an issue.
